I used to be a Marathon Maniac. Now I have fibromyalgia, Raynaud's, scleroderma, a pre-teen Diva, and a set of twins (one with special needs). I'm hoping to be able to get back to running some day, but for now just being able to keep my body as limber and pain-free as I can is my challenge. This is my go-to #breakfast most mornings... 2 eggs Diced onion (usually red) Spinach 4 diced kalamata olives 3 slices of Roma tomato diced Sometimes I add a smidgen of cheese with it, too. Today wasn’t one of those days, though. π This dish is so low-carb I don’t even bother to count the #carbs anymore. It’s literally probably three carbs, maybe?
